A hanger steak is cut from the hanging tender - a cut of beef known for its buttery flavor. This cut is taken from the plate, or upper belly. There is only one hanging tender per cow. It is sometimes called the "butcher's steak", because butchers would often keep it for themselves rather than offer it for sale. Perfect to grill up at a BBQ!
