Flat iron steak or butler's steak is a cut just discovered in 2002 by meat researchers (yes, there is such a thing) from the University of Florida and Nebraska. The flat iron is trimmed from the chuck, or shoulder of the animal. This produces a flavorful piece of meat. Great for grilling!

Price is per individual steak. Weight is approximately 6 - 8oz each. Steaks are individually cryovac-packaged FRESH. NEVER FROZEN.
